Make it Monday: Lemon meringue pie

This weeks make is a bit of a cheat….a delicious cheat.

I admit that when I make lemon meringue I use packet lemon filling and ready made pastry. It’s not that I can’t make them myself but I’ve better things to be doing with my time as I work full time and have 2 demanding girls (1 of whom is currently obsessed with playing in the kitchen sink).

So if you need the cheats way of making lemon meringue then read on my friend.

I buy Greens Lemon Pie Filling – it’s the only brand I use as the lemon isn’t too tart.

I follow the instructions on the side of the box to make the lemon filling – stirring continuously.

The hot lemon filing is poured into the ready cooked pie case and left to cool.

When the filling has cooled then the meringue topping can be prepared using 2 egg whites and caster sugar.

This is whisked until stiff…

then spread on top of the cooled pie filling.

The pie is then placed into the oven and heated until the meringue topping browns ever so slightly.

We really enjoyed this pie – think it was the best one I’ve made so far.
